Chocolate Cake with White Chocolate Icing

Chocolate Cake

  • 3 ounces unsweetened chocolate
  • 1 cup softened butter
  • 1 cup sugar
  • 1/2 cup packed light brown sugar
  • 3 large eggs
  • 2 1/4 cup cake flour
  • 2 tsp. Baking soda
  • 1/2 tsp. Salt
  • 1/4 cup sour cream
  • 1 cup hot coffee
  • 1 tsp. Vanilla

 

Heat oven to 375 degrees .Grease and flour two 9 inch round pans.

Melt chocolate in microwave or double broiler until smooth. Remove from heat and set aside. In a large mixer bowl, thoroughly cream butter and sugars. Add eggs one at a time, beating well after each addition. Mix in chocolate. In another bowl, mix flour, baking soda, and salt. Beat the flour mixture into the cake mixture alternately with the sour cream to blend thoroughly. Pour batter into pans, divided equally. Bake in the center of the oven about thirty minutes until pick inserted into center comes out clean. Cool on racks 10 minutes, then invert onto racks to cool completely. Each layer can be cut in half to make four layers if desired.

White Chocolate Icing

  • 1/2 stick butter
  • 4 ounces white chocolate, melted
  • 2 tbs. Cream
  • 1 box confectionary sugar, sifted
  • 1 tsp. Vanilla

Mix all the above together in a large bowl 2-3 minutes till well combined and ice cake layer. Decorate with Goodwish chocolates.
